Raw noodles with garlic cashew sauce: a fast dinner without cooking ;)


I really admire raw vegans, I would love to go fully raw, but I can't even last a day :D

My toddler is crazy about raw, I would say raw food is his favourite food. I should really learn from my baby boy. My partner decided to try raw diet so recently I have been making a lot of raw dishes.

To be honest I am really enjoying making preparing this kind of food: it is time-saving as you don't really cook, it is all about chopping, blending and 'spiralizing'. So I bought myself a 'spiralizer' from Amazon and I am really enjoying it :) Maybe it sounds weird, but it is so satisfying and relaxing making 'zoodles' and I always try to make them as long as possible. It is real fun and my toddler loves it too.

I have made this dish recently and we all enjoyed it:)

For this dish you will need (1 portion):

1 courgette (or buy ur zoodles in the shop)

handful baby tomatoes

handful shredded iceberg lettuce

handful rocket leaves

1/2 avocado

2 spring onions

fresh parsley

sesame seeds (I used black, if you interested I got it in Chinese supermarket :)

black pepper/pink salt

To make the sauce you will need:

1/2 cup cashews

1 cloves garlic

1 tbsp cup lime/lemon juice

1 tsp apple cider vinegar

a pinch of pink salt

Now get your spiralizer out and make those lovely, green and crunchy zoodles! Yam :)

Next blend all the sauce ingredients in a high-speed blender. (you could soak cashews for about 20 min in hot water, makes them softer and easier to blend)

Now poor that beautiful sauce onto your zoodles and mix everything up.

Thinly chop spring onions, cut baby tomatoes into quarters. If you want to make an avocado rose or just slice it as you normally would. Personally, I love to make avocado roses anytime I get a chance, it just gives your dish that special touch and it looks soooooo beautiful!

Ok so all is prepared plate it the way you want it, or you could do it the way I did it :)

Sprinkle your lovely dish with sesame seeds. (salt and pepper to taste if you need it :)
